Caprese salad
Caprese salad is one of the yummiest and simplest things to make and tastes of summer

Ingredients:
1 1/2 cups Cherry Tomatoes, halved
1 cup Fresh Mozzarella, Large Dice
1/4 cup Fresh Basil Leaves, torn into strips
Or a pinch of dried basil
1 1/2 Tbsp Olive Oil
4 Tbsp Balsamic Vinegar *


Directions:
Mix all ingredients and refrigerate for 1 hour

Number of Servings: 6

* (Traditional Caprese salad doesn't use balsamic vinegar, it uses lemon juice instead. Mix the lemon juice with extra virgin olive oil and season with salt & pepper to make the dressing for this salad.
The salad tastes better at room temperature, if cold the flavours are curtailed and if refrigerated for an hour may be bland and the fresh basil will wilt. It's definitely worth using fresh basil too, this dish isn't the same with dried herbs. Tear the basil, rather than cutting it, as tearing releases more flavour as it bruises the basil.)
